Almond Bars

Almond Bars:

  • 1 3/4 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp. almond extract
  • milk
  • 1/2 cup sliced almonds, coarsely chopped
Almond Icing: 
Stir together the three ingredients to make icing of a drizzling consistency. 
  • 1 cup sifted powdered sugar
  • 1/4 tsp. almond extract
  • 3-4 tsp. milk

Directions (Almond bars): 
Stir together flour, baking powder, and salt. In a large mixing bowl, beat butter until softened. Add sugar and beat until fluffy. Add egg and almond extract and beat well. Add flour mixture and beat until well mixed. 

Divide dough into fourths. Form each fourth into a 12-inch roll. Place two rolls 4-5 inches apart on an ungreased cookie sheet. 

Flatten the rolls until they are about 2-3 inches wide. 

Brush flattened rolls with milk and sprinkle with almonds. Bake at 325 degrees for 12-14 minutes of until the edges are lightly browned. 

While the cookies are still warm, cut them crosswise at a diagonal into 1-inch strips. Be careful not to slice through your cookie sheet. 

After cookies have cooled, drizzle with almond icing and enjoy!
