I tried out a new recipe for moist whole wheat banana bread, hoping that the minor change from white to wheat flour would make the final product a healthy snack. But, I think the stick of butter and 1/2 cup of brown sugar squashed those dreams. Either way, the bread was delicious, especially when topped with a scoop of vanilla Ben and Jerry's. Who was I kidding with that healthy snack idea...
I substituted the cinnamon and nutmeg in the recipe for Penzey's Baking Spice, a deliciously sweet mix of Ceylon cinnamon, Spanish anise, Grenadian mace, and Guatemalan cardamom. If you have not checked out Penzeys Spices before, I recommend you do! My brother and sister-in-law gave me a set of Penzeys baking spices a few years ago, and I have been shopping at their stand in the Grand Central Market ever since. I love all of their products!
There is nothing more comforting than the smell of banana bread filling my apartment.
I also tried this recipe for banana bread oatmeal. And let me just say, it was delicious. I am not a huge fan of hot oatmeal, especially in the summer, so I made a batch the night before work and took it cold the next morning. Cold oatmeal might not sound that appetizing, but I loved it! I snacked on it throughout the morning and it was the perfect morning meal on the go! I think next time I will try the same ingredients and spices, but use quinoa instead of quick oats. Yum!

Um, hi. I want that now, please and thank you. I tend to stock up on bananas "to make banana bread" but don't follow through (cooking isn't really my thing). Glad you shared this lovely recipe!
ReplyDeleteYUMM!! I had 4 bananas that were so close to being ready for banana bread and I was so excited... until I saw that my husband ate 2 and the kids ate the others. Major bummer but probably for the best.
